BUTTERSCOTCH BREAD PUDDING 
2 c. soft bread cubes
2 eggs
2 tbsp. butter, melted
1 1/3 c. milk
1/4 c. plus 2 tbsp. brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
Dash of salt
2/3 c. raisins

Heat oven to 350 degrees. Place bread cubes in buttered 5-cup casserole. Beat eggs slightly; stir in butter, milk, brown sugar, seasonings and raisins. Pour egg mixture over bread cubes. Bake until knife inserted halfway between center and edge comes out clean, about 40 to 50 minutes. Top with light cream, if you like. Serves 4 to 5.
