FRESH APPLE SNACKING CAKE 
1/2 c. butter
1 1/4 c. brown sugar
1 egg
2 egg whites (or 1/2 c. Egg Beaters or 4 egg whites)
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. nutmeg
1/2 tsp. salt
5 c. diced, fresh, green apples (about 5)

Preheat oven to 375 degrees. In a mixer, cream butter until soft. Add brown sugar and cream until light. Beat in eggs and vanilla until smooth. In a separate bowl, combine flour, baking soda, cinnamon, nutmeg and salt. Add to moist ingredients and stir until well mixed. Add apples and beat batter for 2 minutes until well blended. Batter will be very thick and apple will still be in chunks.

Coat a 9 x 13 inch baking pan with cooking spray. Spread batter evenly in pan and bake for 50-55 minutes until cake is lightly browned on top and springs back to the touch. Cool in pan before cutting. Yields: 24 (2 inch) pieces. Per piece 130 calories, 4 grams fat.
