COCONUT SHORTBREAD COOKIES | |
1 c. sugar 1 lb. butter 4 1/2 c. unsifted cake flour or 4 c. regular flour 2 tsp. vanilla 1 - 2 c. dry canned coconut (2 is better) Cream sugar and butter. Add flour, vanilla and coconut. Make into 2 or 3 small rolls and place in refrigerator until hard. Slice in 1/4 inch thick slices and bake at 300 degrees about 25 minutes. Watch carefully. Roll immediately in powdered sugar. |
