HAM AND ZUCCHINI IN CHEESE SAUCE 
4 servings rice or noodles
4 c. thinly sliced zucchini
1/4 c. chopped onion
2 tbsp. water
2 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. milk
1/2 c. shredded cheese
2 c. cubed, cooked ham
1/4 tsp. paprika

Takes 10 1/2 to 17 1/2 minutes.

Cook rice or noodles conventionally while microwaving sauce. Combine zucchini, onion and water in 2 quart casserole. Cover, microwave on high 4 to 7 minutes or until zucchini is tender crisp. Let stand covered while making sauce. Melt butter in 4 cup measure at high 30 to 60 seconds. Stir in flour, salt and pepper until smooth. Blend in milk. Microwave at high 4 to 6 minutes or until thickened, stirring every minute. Stir in cheese.

Drain zucchini. Add ham and cheese sauce to zucchini. Microwave at high 2 to 3 1/2 minutes, or until thoroughly heated. Stir mixture to redistribute sauce. Sprinkle paprika on top. Serve over noodles or rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
