BAKED CHICKEN SALAD 
2 c. diced, cooked, chicken (or shrimp or turkey)
2 c. diced celery
2 c. mayonnaise
1 c. grated American cheese
1/2 c. slivered almonds
1 1/2 tsp. lemon juice
1 tsp. grated onion
Crushed potato chips

Mix chicken, celery, mayonnaise, cheese, almonds, lemon juice, and onion. Put a layer of potato chips in bottom of 2 quart casserole. Spoon on chicken mixture, then top with another layer of potato chips. Bake, uncovered, at 350 degrees for 45 minutes and serve immediately. Makes 6 servings.
