SQUASH SURPRISE 
1 sm. onion, chopped
2 tbsp. bacon drippings
3 lbs. Mexican squash, zucchini, or yellow squash, sliced
2 fresh tomatoes, peeled and chopped
1/2 to 1 tsp. cumin powder
1/2 clove garlic, crushed
Salt and pepper
1/2 to 3/4 grated milk cheese

Saute onion in bacon drippings. Add sliced squash and saute. Add tomatoes, cumin powder, garlic, salt, and pepper. Cover tightly and cook until tender. When ready to serve, add grated cheese. Serves 8.
