TWICE BAKED POTATOES | |
3 lg. baking potatoes, baked Salt & pepper to taste 1/2 of a sm. container sour cream 1 c. Mozzarella cheese 1/4 stick butter 1/4 - 1/2 c. milk Cut potatoes open so you can "dig out" potatoes from skin. Put potatoes in a casserole dish. Add milk, butter, salt and pepper. Mix together to make mashed potatoes. Add sour cream and about 1/2 cup cheese. Mix well. Sprinkle the top with the remaining cheese. Bake in 350 degree oven for 20 to 30 minutes or until golden brown on top. NOTE: Be careful not to put too much sour cream in or this dish will be soupy. The amount needed depends on the size of your potatoes. Variation: If you want the potatoes in the skins, after adding sour cream and cheese, spoon into skins. Top with cheese. Place on cookie sheet and bake for 15 to 20 minutes. Again, be careful about the amount of sour cream. |
