APPLESAUCE FRUIT BREAD 
4 c. buttermilk pancake mix
1 c. applesauce
1/2 c. sugar
1/2 c. brown sugar
1/2 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. nutmeg
1 egg
2/3 c. water
1 c. chopped nuts
1 c. soaked raisins

First soak raisins in enough hot water just to cover for about 15 minutes. The drained water can be used for the water called for in this recipe.

Blend pancake mix, applesauce, sugars, spices, egg and water about 3 minutes on medium speed of mixer, scraping bowl. Fold in nuts and drained raisins.

Pour into 3 well greased and floured 4 x 8 inch loaf pans and bake for 35-45 minutes at 350 degrees. To serve as coffee cake, ice with a powdered sugar glaze. Good sliced, buttered and sprinkled with cinnamon and sugar.
