APPLESAUCE-PECAN BREAD 
2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. sugar
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/2 c. chopped pecans
1/2 c. raisins
1 egg, beaten
1 c. applesauce
1/4 c. vegetable oil

Combine first 7 ingredients in a large bowl; stir in pecans and raisins. Make a well in center of mixture.

Combine egg, applesauce, and oil; add to dry ingredients, stirring just until moistened. Spoon mixture into a greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan. Bake at 350 degrees for 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan, and let cool on wire rack. Yield: 1 loaf.
