SPINACH CASSEROLE 
1/2 c. finely chopped onion
2 tbsp. butter
1 pkg. frozen chopped spinach, cooked
2 eggs, slightly beaten
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
1 c. cream cottage cheese
1/2 c. buttered bread crumbs

Cook onion in butter until soft. Mix with remaining ingredients, except the buttered bread crumbs and place in shallow buttered 8 inch casserole and top with buttered bread crumbs.

Bake 35 minutes in 350 degree oven. Serves 4-6.
