MARCIA'S BAKED RICE 
1 1/2 c. long-grained rice (uncooked)
4 c. chicken broth
1 c. sliced and chopped water chestnuts
1/2 c. chopped parsley
1 c. chopped green onions (scallions)
8 tbsp. butter
1 1/2 tsp. salt
1/4 tsp. white pepper

Combine all ingredients in deep baking dish used for serving. Stir well and bake. DO NOT COVER. Bake at 350 degrees for 45 minutes. Wonderful with chicken or beef dishes.
