CHICKEN SALAD IN BARBECUE SAUCE
WITH SCALLIONS
 
6 tbsp. bottled Heinz chili sauce
4 tbsp. hoisen sauce (is found in Oriental section of supermarket)
1 1/2 tbsp. orange juice
1 tbsp. honey
1 1/2 tbsp. ground ginger (add more for spicier taste)
1 tbsp. soy sauce
3 lg. whole boneless and skinless chicken breasts, about 3 lbs.
2 garlic cloves, minced
1/2 c. peanut oil or vegetable oil
Salt and freshly ground pepper to taste
1 lg. red pepper, julienned
1/2 c. finely sliced scallions, green part only

Preheat oven to 400 degrees.

To make barbecue sauce, combine chili sauce, hoisen sauce, orange juice, honey, brown sugar, ginger and soy sauce; set aside.

Cut breasts in half, removing cartilage. Combine the garlic, oil, salt and pepper and marinate chicken for 10 minutes. Bake chicken on a rack on a baking sheet for 20 minutes. Brush with the barbecue sauce. Cook for 15 minutes. Baste again during last 5 minutes.

Remove and cool. Cut the chicken into 1 1/2 inch chunks. Garnish with red pepper scallions. Enough for 2 hungry people or 6 polite people on a diet.
