WHITE CHRISTMAS PIE 
1 tbsp. gelatin
1/4 c. cold water
1/2 c. sugar
4 tbsp. flour
1/2 tsp. salt
1 1/2 c. milk
3/4 tsp. vanilla
1/4 tsp. almond extract
1/2 c. whipping cream, whipped stiff
3 egg whites
1/4 tsp. cream of tartar
1/2 c. sugar
1 c. shredded coconut

Soften gelatin in cold water. Mix together in saucepan sugar, flour and salt. Gradually stir in milk. Cook over low heat, stirring until it boils. Boil 1 minute. Remove from heat. Stir in gelatin. Cool. When set beat with beater until smooth. Blend in vanilla and almond extract. Gently fold in whipping cream.

Make a meringue of egg whites, cream of tartar and sugar. Fold in carefully the other mixture into the meringue. Pile into cooled pie shell. Sprinkle with coconut. Chill until set.
