GRITS SOUFFLE 
2 c. milk
1/2 c. instant grits
1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp. butter, melted
1/2 tsp. sugar
3 eggs, separated

Preheat oven to 375 degrees. Grease casserole or souffle dish. Scald the milk, add grits and cook until thick, stirring constantly. Add baking powder, butter and sugar. Mix well. Beat egg yolks and add to the grits.

Beat egg whites until they hold a soft peak. Fold into mixture. Put prepared dish into oven and bake at 375 degrees for 30 minutes. Serve hot. Note: Just before folding in egg whites, 1/2 cup grated cheese may be added to make an excellent variation to the above recipe.
