CHICKEN ENCHILADA CASSEROLE 
2 1/2 c. diced cooked chicken
1 (15 oz.) can evaporated milk
1 (10 oz.) can cream of chicken soup
1 (1 1/4 oz.) pkg. taco seasoning mix
1 med. onion, chopped
1/2 c. chopped celery
1 (4 oz.) can chopped green chilies
3 c. broken tortilla chips (nacho cheese chips are best)
3/4 c. diced Cheddar cheese

In 2 quart casserole combine ingredients. Microwave (covered) on high for 13 to 15 minutes, rotating dish 1/2 turn after 6 minutes. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
