CRANBERRY MEATLOAF 
1 egg
1/2 c. milk
1/4 c. bread crumbs
1 lb. ground beef
1 lb. ground pork
2 tbsp. minced parsley
1 1/2 c. chopped celery
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. pumpkin pie spice
1 tbsp. soy sauce
1 (8 oz.) can whole cranberry sauce

In a large bowl, beat egg with milk. Add bread crumbs. Allow to stand 15 minutes. Mix in beef, pork, onion, parsley, celery, salt, pepper, pumpkin pie spice and soy sauce. Bake in meat loaf pan for 1 hour at 375 degrees.

Spread cranberry sauce over top of meat loaf. Return to oven for 10 minutes. Transfer to serving plate.
