SWEET POTATOES CALYPSO 
2 lb. sweet potatoes, baked & peeled
1 c. crushed pineapple, including juice
1/4 c. orange juice
1/3 c. packed dark brown sugar
2 tbsp. butter, melted
1 orange

Note: Substitute canned sweet potatoes and pineapple if desired.

Coarsely mash potatoes in a 2 quart casserole. Add pineapple with juice, orange juice, sugar and butter. Grate zest (orange color) from skin of orange. Combine with other ingredients in casserole. Thinly slice orange and arrange over potato mixture. Microwave on high 9 to 10 minutes or until heated through. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
