BUSY DAY GOULASH 
1 lb. ground beef
1 lg. potato, peeled & thinly sliced or cubed
1/2 sm. onion
1 1/2 c. shredded cheddar cheese or Velveeta
1/4 c. water

In a skillet cook ground beef until brown. Drain well. Top meat with potato and onion. Then add 1/4 cup water to skillet. Bring mixture to boiling; reduce heat. Cover and simmer for 15 to 20 minutes or until potatoes are tender. Top with cheese. Cover and cook 2 minutes more or until cheese is melted. Stir the mixture just before serving. Serves 4 to 6.
