WILD RICE WITH MUSHROOMS 
1 c. wild rice
2 c. chicken broth or water
1/2 tsp. salt
2 slices bacon
1 c. sliced mushrooms
1/4 c. sliced green onions
1/4 tsp. thyme

Run cold water over rice in a strainer about 1 minute. Rinse well. In a saucepan combine rice, chicken broth and salt. Bring to a boil, reduce heat, simmer 40 to 50 minutes. Fluff with fork. Cook bacon, cut up, mushrooms, onion and thyme until bacon is done and mushrooms are tender, stir into rice. Serves 6 to 8.
