ITALIAN CREAM CAKE 
1 stick butter
1/2 c. Crisco
5 eggs, separated
2 c. Cake flour
2 c sugar
1 tsp. baking soda
1 c. buttermilk
1 tsp. vanilla
1 sm. can coconut
1 c. chopped nuts

Cream butter, Crisco, and sugar add egg yolks. Sift flour and soda together. Add to cream mixture alternately with buttermilk. Add vanilla, coconut and nuts. Fold in stiffly beaten egg whites. Use 3 (9 inch) greased and floured cake pans. Bake at 350 degrees for approximately 25 to 30 minutes.

ITALIAN CREAM CAKE ICING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1 tsp. vanilla

Cream butter and cream cheese together. Add sugar and vanilla. Mix well and spread on layers. (May add chopped pecans on top.)
