ZUCCHINI CAKE 
3 eggs, beaten
1 c. vegetable oil
2 c. sugar
2 tsp. vanilla
2 c. flour
3 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
2 c. peeled, coarsely grated zucchini
Powdered sugar glaze

Combine eggs, oil, sugar and vanilla; mix well. Combine dry ingredients; add to oil mixture, mixing well. Stir in grated zucchini. Pour batter into a greased and floured 10-inch Bundt pan. Bake at 350 degrees for 55-60 minutes.

Allow to cool 20 minutes before removing from pan. If desired, spoon glaze over cake.

GLAZE: Combine 1/2 cup powdered sugar and 2 teaspoons milk, mixing until smooth.
