3 eggs
1 c. oil
2 c. sugar
3 c. flour
3 to 4 c. diced apples
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. vanilla
1 c. chopped nuts, optional

Mix together eggs, oil and sugar. Add flour, baking soda, salt, vanilla and cinnamon; mix well. Stir in apple and nuts. Bake at 350 degrees for 60 to 75 minutes in greased tube pan.
