PINEAPPLE CHICKEN 
6 pieces chicken
Salt and pepper to taste
2 tbsp. butter
1/2 c. flour
1 (15 1/4 oz.) can pineapple chunks
Liquid from pineapple
1/4 c. brown sugar, firmly packed
1/4 c. white vinegar
1/4 tsp. ginger
2 tbsp. soy sauce
Thickener: 3 tsp. cornstarch dissolved in 3/4 c. water

Wash and skin chicken. Salt and pepper each piece. Lightly coat with flour and brown in melted butter. Place in large, shallow baking dish. Drain pineapple chunks, reserving liquid. Place liquid in saucepan; add sugar, vinegar, ginger, soy sauce and thickener. Bring to a boil while stirring constantly. Pour over chicken, add pineapple and bake covered 1 hour at 350 degrees. Remove cover and bake additional 5 minutes. Serve over cooked rice.
