PERFECT PORK ROAST 
6 lb. roast
1 tbsp. salt
1 tsp. pepper
1 tsp. thyme
1/2 tsp. mace or nutmeg
1 tbsp. paprika

Let roast stand at room temperature about 1 hour prior to roasting. Preheat oven to 325 degrees. Put roast, fat side up, in an open roasting pan and pat seasoning on fatty side. Do not sear; do not add water; do not cover. Roast 35 minutes per pound.

Plan on a 15 minute rest period out of the oven for the roast before you serve it. This makes carving job easier and neater.
