WHOLE WHEAT PANCAKES 
Egg

Baking powder
Salt

Unbleached flour
Whole wheat flour (pastry)
Ralston
Oil
Vanilla
Nutmeg
Cardamom (optional)

Whisk one egg. Beat in 1 1/2 cup buttermilk. Add 1 teaspoon baking soda, 1 tablespoon baking powder. Whip until bubbly. Sift 1/2 cup unbleached, 1/2 cup whole wheat (pastry) and stir in with 1/4 cup Ralston, 1 teaspoon sugar, 1/2 teaspoon salt. Blend in 2 tablespoons oil, 1 teaspoon vanilla, about 1/8 teaspoon nutmeg (and the same of ground cardamom, if available). Add more buttermilk until consistency of gravy. Griddle. Serve with hot syrup.
