LISA'S RED VELVET CAKE 
1 1/2 cup sugar
1 tbsp. vanilla
2 1/2 cup self-rising flour
1 1/3 cup Wesson oil
3 eggs
1 bottle red food coloring (1 oz.)
1 cup buttermilk
1 tsp. baking soda

Icing:

1 lg. Cream cheese
1 stick butter, softened
1 tsp. vanilla
1 cup chopped nuts
1 box 10X sugar

Mix all ingredients except food coloring. Add food coloring last.

Makes 3 layers.

Bake at 350°F for 30 minutes. Prepare icing. Mix together cream cheese, butter, vanilla, nuts and 10X sugar. Spread between layers, on top and then sides of cake.
