RED VELVET CAKE 
Cake:

2 1/2 c. self-rising flour
2 tsp. cocoa
2 eggs
1 c. oil
1/2 c. butter
2 c. sugar
red food coloring
1 c. buttermilk
1 tsp. vinegar
1 tsp. vanilla

Cream together sugar, oil and butter. Add eggs and beat well. Mix cocoa and food coloring; mix all together. Add vinegar and buttermilk, flour and vanilla. Beat well for 2 minutes on high. Grease and flour 3 round cake pans. Evenly distribute into cake pan. Cook at 325°F until done, 25 to 32 minutes.

Icing:

1 (8 oz.) cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla
1 c. pecans (if desired)

Add together cream cheese, butter, powdered sugar and vanilla. Stir together. May add pecans, if desired. Spread on cake while warm.
