KELLI'S HOMEMADE COCONUT PIE 
3 c. milk
1 1/2 c. sugar
4 tbsp. cornstarch
4 egg yolks
1 tbsp. vanilla
1 tbsp. butter
1/2 tsp. yellow food coloring

Put cornstarch, sugar, milk,, egg yolks (save whites for top of pie) in saucepan. Cook until thick. Add butter, vanilla and food coloring. Add about 1/2 cup of coconut. Put in pie shell; brown top.

TOPPING:

Beat egg whites until stiff with 1/2 teaspoon of cream of tartar, then add 3 tablespoons of sugar; put on top of pie.

PIE CRUST (makes 2-crust) :
Pinch of salt
2 c. all-purpose flour
1 c. Crisco
1/2 c. water

Mix flour and salt with Crisco until mixed. Add water. You may need to add a little more so you can roll it out. Make 2 crusts.
