BLACK EYED SUSAN CUPCAKES 
8 oz. cream cheese
1/3 c. sugar
1 egg
1/8 tsp. salt

Cream together in small bowl. Stir in 6 ounces chocolate chips and set aside. Mix together:

1 1/2 c. flour
1 tsp. baking soda
1 c. sugar
1/2 tsp. salt
1 c. water
1 tbsp. vinegar
1/4 c. cocoa
1/3 c. salad oil
1 tsp. vanilla (or more if you like)

Mix on high until well blended. Fill cupcake papers 1/3 full of chocolate cake mixture and add 1 tablespoon cream mixture. Bake at 325 degrees 25 to 27 minutes.
