CHICKEN CASSEROLE 
4 chicken breast (or whole chicken)
4 individual pkgs. Escort crackers
1 can cream of chicken soup
1 can cream of mushroom soup
1 (8 oz.) carton sour cream
1 sm. can sliced water chestnuts, drained
1 stick butter, melted

Cook chicken (boil or bake) and cut into bite sized pieces; crush two packages of Escort crackers and place in bottom of casserole dish; combine chicken, soup, sour cream, and water chestnuts. Dab mixture on top of crackers in casserole; crush two remaining packages of Escort crackers and combine with melted butter; sprinkle on top of casserole. Bake at 350 degrees for 30 minutes.
