RICOTTA COOKIES 
1/2 lb. butter, melted
2 c. sugar
4 c. flour
1 tsp. baking soda
3 eggs
1 tsp. vanilla
1 lb. ricotta
1 tsp. salt (may be omitted)
If you like raisins - 1 c. may also be added

Put all ingredients in bowl and mix well. Drop by teaspoonful on a Pam sprayed cookie sheet and cook until lightly browned. This cookie dough may be spread on the pan and cut in squares after cooled and iced. Bake at 350 degrees approximately 15 to 20 minutes. Make a thin powdered sugar icing with your favorite flavoring.
