RICOTTA COOKIES 
1/2 lb. butter
2 c. sugar
2 eggs
1 lb. ricotta
1/2 bottle anise or vanilla
4 c. flour
1 tsp. baking powder
1 tsp. baking soda

Cream butter and sugar. Add eggs, one at a time, beat well. Blend in ricotta, add vanilla or anise. Mix dry ingredients, mix well. Bake at 350 degrees 10-12 minutes for gas stove; a little longer for electric stove. Frost with simple sugar frosting. Serves plenty.
