IMPOSSIBLE SPINACH PIE 
1 pkg. frozen chopped spinach, thawed & drained
1/2 c. chopped onion
1 c. shredded Swiss cheese
3 eggs
1 1/2 c. milk
3/4 c. Bisquick
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg

Preheat oven to 400 degrees. Grease 10" pie plate. Heat 1" salted water to boiling. Add spinach, cover and heat to boiling. Cook until tender, 5 minutes; drain thoroughly.

Mix spinach, onion and cheese in plate. Beat remaining ingredients until smooth in blender on high or 1 minute with hand beater.

Pour into plate, bake until knife inserted in center comes out clean, about 30 minutes. Cool 5 minutes before serving. Serves 6.
