GRANDMOTHER'S DATE SOUFFLE 
1/4 c. butter
4 lg. eggs, separated
1 c. milk
2 c. fresh pitted dates, chopped
1/4 c. sugar
1/4 c. flour
1/2 tsp. salt
1 tsp. grated lemon rind

All ingredients should be at room temperature. Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy. Gradually stir in milk. Beat egg whites together with salt until stiff but not dry. Fold into the milk mixture. Fold in the dates and lemon rind. Pour into greased 1 1/2 quart souffle dish and bake 1 hour. Meanwhile, prepare sauce.

SAUCE:

1/2 c. sugar
1 tbsp. grated orange rind
1 tbsp. cornstarch
1 egg yolk
1 c. orange juice
1/4 c. lemon juice
1 tbsp. butter

Combine all sauce ingredients except the egg yolk in sauce pan. Bring to boil, stirring. Cook 2 minutes. Stir a little hot mixture into yolk. Return to sauce pan and heat but do not boil. Serve warm with souffle.
