SHERRIED CHICKEN 
1/2 c. flour
2 tsp. salt
1 (3 lb.) chicken, cut in serving pieces
3/4 c. butter
1/2 c. dry sherry
2 tbsp. soy sauce
2 tbsp. lemon juice
1/4 c. finely chopped preserved ginger

Combine flour and salt; coat chicken pieces with the mixture. Melt 1/2 cup butter; brown chicken on all sides and place chicken pieces in a covered baking dish.

In a saucepan combine remaining butter, sherry, soy sauce, lemon juice, and ginger. Bring to boil, stirring and pour over chicken. Bake in 350 degree oven for 1 hour or until tender. Served in the Kennedy White House.
