CHICKEN IN SHERRY AND MUSHROOMS 
2 lbs. boneless chicken
2 oz. corn oil
1/2 tsp. salt & pepper
2 lg. cans mushrooms (do not drain)
3 oz. butter
4 oz. cooking sherry

Cut chicken into bite sizes. Flour and brown in corn oil. Add salt and pepper. Pour off excess oil. Add mushrooms with liquid. Add butter. Allow butter to melt. Add sherry and cook 5 minutes. Pour into casserole and bake for 15 minutes in 350 degree oven.
