JAM CAKE & SIMPLE CARAMEL FROSTING | |
2 c. brown sugar 2 c. buttermilk 1 c. raisins 2 tbsp. baking soda 1 tsp. cocoa 1 c. blackberry jam 1 c. strawberry jam 1 c. chopped walnuts 6 eggs 1 tsp. cinnamon 1 tsp. ground cloves 1 tsp. allspice 1 tsp. nutmeg 3 1/2 c. sifted flour Cream sugar, buttermilk and flour in large bowl. Add raisins, soda, cocoa, jams, walnuts and beat. Add spices and eggs, beating well. Pour into 2 or 3 (9 inch) greased iron skillet. Bake at 350 degrees for 40 minutes. SIMPLE CARAMEL FROSTING: 3/4 c. butter 1 1/2 c. brown sugar 1/4 c. plus 2 tbsp. milk 3 c. powdered sugar 1 tsp. vanilla Melt butter. Add brown sugar and milk and bring to a boil. Take off stove and cool. Add powdered sugar and vanilla. Beat until creamy and smooth. |
