CAESAR DRESSING 
1/2 c. freshly grated Parmesan or Asiago
1/4 c. olive oil
1/4 c. vegetable oil
1/4 c. fresh lemon juice
2 garlic cloves
1 tsp. Worcestershire sauce
1 to 2 anchovies (optional)

Combine all ingredients in blender or food processor. Blend until smooth. Season to taste with pepper. Cover and refrigerate. This can be prepared two days ahead.

I was looking forward to making this dressing. I have been trying to find a caesar dressing like my mom used to make. I followed this recipe exactly the way it called for and I was dissapointed. It had too much lemon juice- maybe I could only use 1/8 cup of lemon juice vs 1/4 cup.
