BAKED CARROTS 
2 lbs. carrots, sliced, cooked and drained
1/2 lb. Velveeta cheese
1 stick butter
1 tube Ritz crackers, crushed

Cook carrots and drain. Melt cheese and butter together. Put carrots in a buttered casserole dish and pour cheese mixture over carrots. Top with crushed crackers. Bake at 300 degrees for 30 minutes.
