SCALLOPED HAM 
1 c. chopped cooked ham
3/4 c. buttered cracker crumbs (cheese crackers)
4 hard cooked eggs chopped fine
2 c. med. white sauce

In a small greased casserole arrange alternate layers of crumbs, eggs, cream sauce and ham and repeat. Save enough crumbs to provide a top layer. Make a cream sauce with 3 tablespoons butter, 3 tablespoons flour and 2 cups milk and seasoning to taste. Bake in moderate oven (350 degrees) until crumbs are brown, about 15 to 20 minutes.

Serve with fried green tomatoes and buttered boiled white onions. Good with cranberries or pickled peaches or sweet potatoes.
