TUNA-BEET SALAD (LOW FAT) 
3 c. shredded lettuce
1 can sliced beets, well drained
2 (6 1/12 oz.) cans tuna, drained
2 hard cooked eggs, chopped
1 c. sliced celery
1/2 c. low-fat mayonnaise or salad dressing
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/2 tsp. parsley

Arrange lettuce, beets, tuna, eggs and celery in layers in a serving bowl. In a small mixer bowl, combine mayonnaise, salt, pepper and garlic powder; mix well. Spoon mayonnaise mixture on top of salad, in the center, and garnish with parsley. To serve, toss salad to evenly distribute all ingredients.

i tried this recipe to use up leftover canned beets as I had most ingredients in the frig - made everything before I went out - came back for lunch & mixed - very good. I do not like recipes that call for 1/6 tsp. of a spice/herb I will never use up - this fits the bill. Will definitely make again.
