MEXICAN LAYER CASSEROLE | |
1 lb. ground beef 1 med. onion, chopped 1 can (16 oz.) refried beans 1 can (8 oz.) tomato sauce 1 pkg. (1 1/2 oz.) enchilada sauce mix 1/2 c. water 7 c. (about 8 oz.) tortilla chips 1 c. (4 oz.) shredded cheddar cheese 1/4 c. sliced black olives (opt.) 2 c. shredded lettuce 1 med. tomato, chopped Crumble ground beef and onion together. Microwave (high) uncovered for 5 to 6 minutes or until meat is set, stirring once. Stir to break meat into small pieces, drain. Stir in beans, tomato sauce, sauce mix and water. Microwave (high) uncovered 6 to 7 minutes until hot and bubbly, stirring once. Place slightly crushed tortilla chips in a 12 x 8 inch glass baking dish. Spoon hot meat mixture evenly onto chips. Sprinkle with cheese and olives. Microwave (high) uncovered 2 to 2 1/2 minutes until cheese melts. Garnish with lettuce and tomatoes. |
