POTATO CANDY | |
1 med. sized white potato 3 lb. bag confectioners' sugar 1 jar peanut butter, creamy or crunchy Waxed paper Rolling pin Boil potato with skin on. When potato is done, skin off peeling and begin to mash potato in bowl. Use fork, potato masher or mixer. If any potato lumps are too hard to smush, simply remove them. Sift confectioners' sugar into mashed potatoes. DO NOT USE WATER OR ANY LIQUID. Mix well and keep adding only sugar until potato makes a thick enough dough to roll out on sugared waxed paper. Keep sugar on paper and rolling pin. Work with small amount of potato dough at a time. When rolled to rectangle shape (being sure it is not sticking to waxed paper), spread peanut butter on potato dough and roll up, as for a jelly roll. Wrap in waxed paper. Refrigerate. Slice to serve. Will make 3 to 6 rolls of candy. |
