PARSLEY POTATOES 
1 tbsp. lemon juice
1/2 c. chopped melted butter
Chopped parsley
Chopped mint
Potatoes

Add lemon juice to melted butter. Sprinkle potatoes with chopped parsley or roll small whole potatoes in parsley and pour the melted butter over them. As a variation use chopped mint in place of parsley. Bake in oven until done.
