ITALIAN COCONUT CREAM CAKE 
5 egg whites
2 c. sugar
1 stick butter
1/2 c. shortening
5 egg yolks
1 c. buttermilk
2 c. flour
1 tbsp. baking soda
2 c. coconut
1 tsp. vanilla
1 c. pecans

Beat egg whites; set aside. Cream together sugar, butter, shortening. Add egg yolks, butter. Sift together flour and add and add to above. Add coconut, vanilla, beaten egg whites and pecans. Bake at 350 degrees for about 35 minutes.

ICING:

1 stick butter
8 oz. cream cheese
1 box powdered sugar
