ZUCCHINI YEAST ROLLS 
1/2 c. zucchini, shredded
1/4 c. sugar
1/4 c. shortening
1/2 tsp. salt
1/2 c. scalded milk
1 pkg. yeast
1/4 c. lukewarm water
2 1/2 c. flour

Combine zucchini, sugar, salt and shortening with milk. Heat to lukewarm. Dissolve yeast in lukewarm water and add to milk mixture. Add flour and mix well.

Dough will be soft. Let rise until double in bulk. Knead and shape into pan rolls and let rise again. Bake at 400 degrees for 15-20 minutes.
