FRESH SPINACH SALAD 
DRESSING:

1/4 c. vegetable oil
3 tbsp. tarragon wine vinegar
1/8 tsp. salt
1 tsp. sugar
1/2 tsp. dry mustard
Freshly ground pepper, to taste

Combine dressing ingredients and set aside. 5 slices bacon 1/3 c. sliced almonds 3 green onions, including some tops, thinly sliced 1 red apple, unpeeled & diced

Thoroughly drain spinach and place in refrigerator. Saute bacon, drain on paper towels and crumble it into small pieces. To assemble salad; break spinach into small pieces and place into salad bowl. Add bacon, almonds, green onions, red apple and toss salad ingredients. Spoon dressing over salad to taste.
