ROAST LEG OF LAMB 
9-10 lb. leg of lamb
Salt
Onion salt
Garlic powder
Paprika
Black or red pepper
1 clove garlic, crushed

Skin lamb and rinse. Pat dry. In bowl, combine 1 1/2 teaspoons salt, 1/4 teaspoon onion salt (heaping), 1 1/2 teaspoons garlic powder, 2 teaspoons paprika, 1/4 teaspoon pepper. Rub into lamb. Bake at 350 degrees for 3 - 3 1/2 hours. When pan juices appear, mix 1/2 cup juices with crushed garlic. Baste lamb several times with this mixture to keep moist. Will be brown and crisp outside.
