MUSTARD PEAR PICKLES 
1 c. all purpose flour
1 qt. white vinegar
2 tbsp.salt
1 tbsp. celery seeds
2 qt. pears, peeled and chopped
7 green peppers, cut into sm. strips
4 c. water
1 3/4 c. sugar
1 tbsp. tumeric
1 tbsp. mustard seeds
2 c. chopped onion

Stir together flour and water. Combine flour mixture with next 6 ingredients in a saucepan. Bring to a boil, and simmer 4 minutes, stirring constantly. Combine pears, onion, and green peppers in large saucepan or Dutch oven. Stir in vinegar mixture; bring to a boil. Cook 4 additional minutes, stirring constantly. Spoon mixture into hot sterilized jars, leaving 1/8 inch headspace. Adjust lids and process 10 minutes in a boiling water bath. Makes about 4 quarts.
