BRIE EN CROUTE 
3 sm. rounds Brie cheese
1 egg yolk
1 pkg. frozen patty shells

Roll out 2 patty shells for each Brie. Place Brie on top of one round of pastry and fold up sides. Cut circle in second pastry round with empty Brie container. Place this round on top of Brie. Cut 2 strips of pastry 3 x 1/2 inch. Use this to wrap around top edges and crimp to join top crust and folded up sides. Brush with egg yolk. This can be frozen at this point. Bake at 450 degrees for 10 minutes, then reduce heat to 350 degrees and bake for 20 minutes more or until crust is lightly browned. Cut into wedges and serve with rusks or fruits.

Note: A great make ahead appetizer!
